A compiled list of recipes..

Apple-Cinnamon Oatmeal Cakes

(makes 2 “muffin-sized” cakes)

  • 1/2 cup oats (50g)
  • 1/4 tsp vanilla extract
  • 1/2 tsp cinnamon
  • sweetener, such as 1 1/2 T maple syrup or 1 to 1 1/2 packs stevia (I omitted, but I’ve cautioned y’all before about my lack of sweet tooth.)
  • 3 T unsweetened applesauce (60g)
  • 1-2 T chopped apple
  • 1/4 cup milk, creamer, juice, or water (I used 60g water)
  • heaping 1/16th tsp salt
  • Optional: 1T oil or nut butter (if oil, scale the milk back a little)

Preheat oven to 375 degrees. Combine raw oats, spices, applesauce, apple, and liquid. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. Finally, set your oven to “high broil” for 3 more minutes (or simply just bake longer, but broiling gives it a nice crust). Don’t forget to spray your ramekins first if you want your cakes to pop out.

Banana Bread Boatmeal

Based on the Cookie Dough Baked Oatmeal

  • 1/2 cup oats (50 g)
  • a litle over 1/16th tsp salt
  • a little over 2 T mashed, very-ripe banana (40 g)
  • 3 T non-dairy milk or water (45 g)
  • 1 T virgin coconut oil (Or you can sub 1T more liquid or extra banana, for a lower-fat version. But the coconut oil makes this recipe SO freakin buttery!)
  • Sweetener (I omitted, but a normal person would probably like 1 to 1 1/2 T sugar or 1 packet Nunaturals stevia)
  • Optional: walnuts, cinnamon, vanilla extract, peanut butter, or whatever else you put in banana bread (Chocolate chips?)

Preheat oven to 380 degrees. Combine dry ingredients, then mix in wet. Pour into a small baking pan, loaf pan, or 1-cup ramekin (or, for mini boats, two 1/2-cup ramekins). Cook for 15-20 minutes, or more until it’s firm. (Cooking time varies, depending on whether you use oil or not.) Finally, set your oven to “high broil” for 5 more minutes (or simply just bake longer, but broiling gives it a nice crust).

Blueberry Muffin for One

Makes one cupcake, Single-Lady style!

  • 3 T spelt flour (30g) (or ww pastry, white, or Bob’s gluten-free)
  • 1/4 tsp baking powder
  • heaping 1/16 tsp salt
  • 1-2 T blueberries (fresh or frozen)
  • 1/2 tsp vanilla extract
  • 1 T unrefined coconut oil (You can sub a different oil; however the coconut oil gives it a rich flavor and fun texture. You can use applesauce for a fat-free version.)
  • 1 T plus 1 tsp nondairy milk (Use less if using liquid sweetener.)
  • 1 T sugar (or 1 packet stevia) I omitted, but most people will want some sweetener

Preheat your oven to 330 degrees. (Or see microwave note, below.) Mix dry ingredients, then add wet. Mix until just combined (don’t overmix), and bake for 17 minutes or so. (Baking time will vary, depending on the flour and oil/applesauce you use.)

Easiest Bread Recipe Ever

Ingredients:

  • 3 cups of whole wheat flour
  • 1 tsp baking powder
  • 1 tbsp sugar
  • 3 tbsp whole flax seeds
  • 3 tbsp sesame seeds
  • 2 cups of club soda

Combine all the dry ingredients and combine well. Make sure the baking-powder mixes with everything else well. Now pour 2 cups of cub soda. Measure carefully, trying not to let it froth up. It’ll froth up the moment you add it to the flour mixture. Combine everything well.

Fold the dough into a greased loaf pan. sprinkle some more flax seeds and sesame seeds on top. Bake at 200 degree C for 45-50 minutes till the toothpick inserted in the center comes out clean.

Wait for the loaf to cool down a bit before you cut into it.

Chili Minestrone Soup [beta!]

Ingredients

  • 1 serving diced tomatoes, pureed
  • 1/2 serving diced tomatoes
  • 1/4 serving kidney beans
  • 1/4 serving garbanzo beans
  • 1/4 serving black beans
  • 1 serving chicken
  • 1 serving assorted veggies
  • 1/2 cup stock
  • 1/2 cup water
  • 1 serving pasta or rice
  • oregano
  • cayenne
  • chili powder
  • 1 tbsp garlic
Directions
  1. Cook pasta or rice
  2. Heat garlic, beans, chicken, and veggies in desired method
  3. Boil stock, water, and tomato puree
  4. Add in garlic, beans, chicken and veggies
  5. Add in pasta or rice
  6. Season with oregano
  7. Simmer
  8. Season with cayenne and chili powder to taste
Mini Spinach Bean Salad [x2 for regular size]
Ingredients
  • 2 tbsp kidney, garbanzo, and black beans
  • 1 oz chicken
  • 42 g spinach
  • 1/4 oz sun dried tomato
  • 3 ripe olives
Directions
Toss everything together.
Berry Fizz
Ingredients
  • 1 cup of frozen assorted berries
  • enough sparkling water (berry flavored) to cover the berries
Directions
Pour sparkling water into the cup of berries. Wait until berries thaw a little and then mash them up.
